Inspector's notes

Observed milk (60-64°F), dairy based drinks (62°F) and dairy based pies (64°F) cold holding above 41°F in the cold holding unit near the drive thru. The unit measures °F on the min max thermometer. Both thermometers were calibrated at time of inspection. All products in the unit for over 4 hours were discarded (see embargo). The manager set up an ice bath for milks and staff will retrieve pies from the walk in until the unit is able to maintain foods at or below 41°F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Adequate refrigeration is available to continue operations. Corrective Action: Corrected at time of inspection.
