Inspector's notes
Observed that chicken from the day before was in blast chiller of deli at 45*F. Food is to be chilled from 135*F to 70*F within 2 hours and from 70*F to 41*F within an additional 4 hours. As per the store, the chicken is placed in the blast cooler to cool to 41*F. Staff are to take temperature prior to preparing for resale. Chicken was embargoed and discarded since it did not cool to 41*F within safe parameters. Store manager will retrain night staff with correct store procedures. Corrective Action: Corrected at time of inspection.

Observed portioned mash potatoes (70*F), corn (56*F) and mac and cheese (64*F) in warmer for sale. As per the person in charge items were portioned and place in warmer approximately 45- 60 minutes prior to inspection. Person in charge had option to continue heating product in oven to 135*F. Business decided to discard and prepare new product. Hot hold of food to be 135*F or greater. Advised manager to meet with staff an ensure food is heated to 135*F prior to placing in warmer.
