Inspector's notes

Observed employee washing hands for less than 10 seconds on the server line. Discussed the importance of proper hand washing procedures with PIC. Proper handwashing procedure is to rinse hands with warm water, scrub with soap for 10-15 seconds, rinse with warm water, dry with approved drying provision, and turn off in a manner to prevent re-contamination of hands. Entire process should take approximately 20 seconds for full and proper handwashing to prevent spread of pathogens and contamination. Employee washed hands properly at time of inspection. Per PIC, all items listed above were placed in cooler more than 4 hours prior to inspection. PIC voluntarily discarded all items at time of inspection. Also, observed the following TCS food items in same cooler at 48-51*F: 1000 island sauce stating "keep refrigerated", in-house ranch made with dairy products, campfire sauce containing tomatoes, marinara sauce containing tomatoes, blue cheese sauce. Per PIC, items were placed in cooler less than 4 hours prior to inspection. PIC relocated to other coolers to rapidly cool to 41’F or below at time of inspection. Ambient minimum air temp was measured with max/min to be 53.4 *F. PIC will discontinue use of cooler until repaired. Adequate other refrigeration is available. Discussed proper cold holding.
