Observed missing/separated high temperature caulking on the ventilation system of the rotisserie chicken cooking and bagging area. Discussed with person in charge (PIC) the fixed parts of equipment shall be sealed with caulking for the equipment and high temperature caulking for the ventilation to create a smooth and easily cleanable surface and prevent the buildup of grease and contamination. Discussed with PIC to replace the caulking of all fixed equipment. Employee stated caulking has been ordered and is in transit. Corrective Action: Correct prior to next routine inspection. Repeat violation (2nd consecutive).

Discussed with Person in Charge (PIC) all equipment and food contact surfaces must be completely air-dried after properly cleaning and sanitizing. PIC unstacked and spaced out the containers to allow for proper air drying at time of inspection. Corrective Action: Corrected at time of inspection.
