Three containers of hashbrowns in prep and cookline areas with no set discard times. The PIC was unsure of when the in use container was made and discarded-see embargo form. An employee stated that the other two containers were made about 20 minutes prior and provided discard times. Observed upright Traulsen Refrigerator with ambient temperature of 50*F-51*F with min/max thermometer. Inside several tcs foods were 50*F-53*F with inspector and establishment thermometers. Following tcs foods inside the unit were: container of open shredded American cheese; open cut spinach, open raw burgers; open raw fish etc. Per Person In Charge unit was temperature checked twice in morning. Outer display of unit is displaying 32*F however min/max has unit at 51*F. Time is after 11:30am. Directed PIC to move all tcs foods to cool to 41*F. Verified after 30 minutes. PIC had employee move all foods to freezer walk in unit. ==Thermometers were all calibrated.

Below unit was open bags of assortment of bread options becoming wet; kitchen food contact surfaces becoming wet; multiple condensation leaks around the main walk in freezer unit door dripping grey water on open box of to food contact containers. Notified Person In Charge (PIC). Per PIC the leaks started around yesterday and continued to this morning. Time of inspection is at 10:15am. Directed PIC to move all cooking equipment/waffle units; cooking utensils; assortment of breads away from the leakage areas. Discussed on previous inspections to move portable waffle area. ===============Food shall only contacts surfaces of equipment and utensils that are cleaned & sanitized or contact singleservice and single-use articles and cleaned linens. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means.
