Observed raw in shell eggs stored in stand up fridge above vegetables. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Corrective Action: Corrected at time of inspection.

Inspector's notes
Observed multiple TCS food in cold holding unit out of temp including, raw shelled eggs (63*F), cooked chicken (55*F), cooked beef (55*F), bean sprouts (54*F), cooked carrots and broccoli (54*F). Unit had an ambient temp of 59*F with the digital thermometer reading 57*F. Person in charge put a work order in for unit to be repaired. Person in charge stated all food at the top reach in part of unit were placed in unit an hour prior to inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods placed in unit within 4 hours improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. PIC stated eggs are normally stored in the unit and were discarded at the time of the inspection. Corrective Action: Corrected at time of inspection.

Final Construction inspection conducted with site superintendent, Jose.RP for soda and Ice machine tested and certified.If any drinks/food are assembled in FOH area, then a hand wash sink will be required.Construction completed and approved. Inspection report was emailed to Jose.Prior to operating:1. Provide hose hanger at mop sink or trim hose so that it does not hang in basing.2. Repair small leaks at 3 compartment sink.3. Trim drain line at 3 compartment sink so that it maintains 1 inch air gap above finished floor.This establishment/operation has demonstrated sufficient compliance to proceed with the issuance of the permit. To complete the permitting process, issuance of this permit, and begin operation, the applicant must first submit payment of the annual operating permit fee to the Department’s Administrative Services. Fees paid up to this inspection approval do not include the annual operating permit fee. PAYMENT with a credit/debit card can be made via phone at 602-506-6824, Option 2. Per MCEHC Chapter I, Regs 4 & 5, no person shall conduct an operation or operate an establishment for which a permit is required without holding the necessary and valid permit to do so. Payment with a credit/debit card can be made on-line via select “Pay a Fee” at esd.maricopa.gov. Equipment inspection conducted with Site Superintendent. At the time of this inspection, this project was about 70% complete. Inspection report was emailed to Doung.Prior to final:1. Install RP upstream of carbonator for soda at front counter. All plumbing downstream must be pex/plastic/stainless, no copper. 2. Ensure all drain lines from soda system and backflow are rigid and run to floor drain with 1 inch air gap above finished floor.3. Paint underside of counter and all wood supports with semi or high gloss paint.4. Seal gaps at wall and counter juncture.5. Seal gaps in hood with heat resistant silicone.6. Provide dedicated water line at mop sink.7. Seal gaps between repair FRP and tile cove. 8. Continue installing cove base in areas where missing.9. Provide transition around grease interceptors.10. Seal all fixed equipment to the floor.For final-ensure hot water to all fixtures with 45 seconds and all refrigeration is holding at or below 41°F.Please continue with construction according to plans, stipulation letter, and inspections. Please call (602) 526-0917 for a final inspection at 100% completion of project or if an additional onsite walk-through is needed.
