Observed dishwashing machine to generate chlorine sanitizer with a concentration of 0ppm. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. Food-contact surfaces were properly sanitized at time of inspection. Dish machine was fixed at time of inspection and generated approved concentration of 50-100ppm. Corrective Action: Corrected at time of inspection.

Observed establishment to non-continuously cook chicken. Person in charge stated raw chicken is grilled to obtain grill marks, not achieving final cooking temp of 165*F. Chicken is then cooled in walk in fridge where it was observed to be mostly pink. PIC stated after par cooking, the chicken is fully cooked upon order to 165*F. Non-continuous cooking of raw animal proteins requires prior approval of written procedures by department. Corrective Action: Correct prior to re-inspection. Re-inspection scheduled 6/20/25.

Observed tongs used for grill cook top stored in canister of water temp at 75*F. In-use utensils must be stored in a clean, dry location; in running water; or in hot water above 135°F. If utensils are stored in food, the handles must be stored above the surface of the food. Discussed with cook about having metal storage canister on grill hot top to maintain proper water temp. All in-use utensils were properly stored at time of inspection. Corrective Action: Corrected at time of inspection.

Observed fridge unit in bar that attaches to walk in fridge needing repaired. Both doors do not fully close on the bottom, recommended attaching additional magnet. Door seal on the right door is falling off. All equipment must be maintained in good repair at all times. Equipment components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted.
