Inspector's notes
Arrived onsite and maintenance was working on the freezer as it was not working. Observed breaded onion rings and chicken nuggets on sheet trays on a speed rack by the hot holding box in the kitchen. The sheet trays were at temperatures of 55*F to 57*F measured with a probing thermometer. Per person in charge (PIC) the onion rings and the chicken nuggets were stored in the freezer overnight. Log sheet shows on 8-19-25 temperature of the freezer unit was at 44*F per PIC that temperature was taken at 3pm. The log sheet shows on 8-20-25 54*F that temperature was taken at 7am. Embargoed the chicken tenders and the onion rings and PIC discarded at time of inspection. Discussed with PIC except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
