No time was logged on the sheet for the day 7/9/25 and per PIC they had made the current batch is the 2nd batch of the day and it was made 40 minutes prior to inspection. Discussed with PIC Time as a Public Health Control requires written procedures detailing process for Time as a Public Health Control and time-stamping for items actively held under Time as a Public Health Control. All TCS foods being held under time as a control were properly time stamped at time of inspection. Corrective Action: Corrected at time of inspection.

Per PIC, the boba pearls were cooked and placed in prep table 3 hours prior to inspection. The black boba pearls were placed in short reach in cooler to rapidly cool. Discussed the importance of proper cooling methods to allow for proper cooling with the PIC. TCS items should be cooled in uncovered, shallow pans in equipment designed for cooling such as walk-in, by using an ice bath, or another effective means. Foods must be cooled from 135'F-70'F in the first 2 hours and from 70'F-41'F in the next 4 hours for a total of 6 hours. Food prepped from ambient air temperature foods must be cooled from 70'F-41'F within 4 hours. Proper cooling can not take place in a prep table. Correct By: Corrected At Time Of Inspection
