-- Observed opened container of marinara sauce in reach-in refrigerator with prepped date of 9/24/25. Observed another opened container of marinara sauce and cut tomatoes with no date on them. The PIC was unsure when the items were opened/prepared. Requested all RTE/TCS foods past 7 days of preparation and without date mark labels on them be discarded by PIC at the time of inspection. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Corrective Action: Corrected at time of inspection.
