Observed cheese puffs sitting out on speed rack with an internal temperature of 63*f degrees. Per Kitchen manager items had been set out since 8am to thaw to be cooked for lunch service. Discussed keeping item inside fridge once item has become unfrozen. Do not exceed 41*f degrees. Observed two milk coolers holding carton milk 49-52*f degrees. Per kitchen manager milk shipment had been received from this morning within 4 hours. Corrective Action: Corrected at time of inspection.

Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below.
