Inspector's notes

Observed cheese puffs sitting out on speed rack with an internal temperature of 50-60*f degrees. Per Kitchen manager items had been set out since 9am to thaw to be cooked for lunch service. Discussed keeping item inside fridge once item has become unfrozen. Do not exceed 41*f degrees. Observed double door fridge holding cheese sticks and cup yogurt at 49*f degrees. Per PIC item had been bagged and prep to set in fridge less than 4 hours prior. Corrective Action: Corrected at time of inspection.

Predefined Comment: Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below.
