Observed raw eggs, cooked chorizo, and cooked beef at 45-65F in bottom of prep line cooler. PIC reports these items were brought out to prepare orders about an hour prior to inspection and were cooling from ambient temperature. PIC relocated items to walk in cooler to rapidly cool. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Corrective Action: Corrected at time of inspection.

Observed several items in top compartment of large cold holding unit with an ambient temperature ranging 45-49*F (pico, cooked diced potatoes, lettuce, sour cream, taquitos, etc). Person in charge stated foods were prepped and placed in unit for cooling to 41*F within 2 hours prior to inspection. Foods actively cooling should be placed in equipment designed for cooling. Person in charge had employees placed food in freezer for quick cooling to 41*F. After 20 min, food were holding an internal temperature of 42*F-47*F and cooling down. Foods will remain in freezer and moved to cold holding unit once reaching a temperature of 41*F. 3-501.15 (B) - Core: Cooling Methods; Covered and Properly Arranged Containers.
