Observed employee sanitizing dishes at 3 compartment sink for 2-3 seconds and not immersing but splashing up the sanitizer to cover the dishes. Talked to manager, had employee resanitize the dishes. Ensure that all dishes are covered by santiizer water for at least 30 seconds. Corrective Action: Corrected at time of inspection.
