Observed the cook's meat cold holding prep station to have a minimum temperature of 55.4F, measured with a calibrated min/max thermometer. Cold holding units that are used for TCS foods must keep the foods at 41F or below. Per the PIC, the meats, beef and chicken, had been in the unit for less than 1 hour and were moved to the walk in cooler to reduce temperature. The establishment has sufficient cold holding units for operation, including a walk in cooler and 2 additional prep stations that can be used unit the meat prep station is fixed. The PIC called to have the unit serviced at the time of this inspection. Will reinspect within 10 days. Electronic submission by email with the repair invoice may be submitted by email in lieu of on site reinspection. Correct By: Correct Prior To Reinspection

Wiping cloths must be stored in a solution that tests between 50ppm and 100ppm for chlorine sanitizer.
