GM stated that 3-comp is not used for wash rinse and sanitizing and only hand washing. 3 comp sink is labeled with a hand wash sticker. Discussed removing wash rinse and sanitize stickers to communicate sink is for hand washing only.

Observed both line cook employees washing hands in prep sink due to a clog in the basin of the establishments only dedicated hand sink. Discussing needing to use dedicated hand sinks only for hand washing. Corrective Action: Corrected at time of inspection.

Observed employee using dishwasher with a chemical test of 0ppm of chlorine sanitizer. While in use, chlorine sanitizer level must be maintained between 50-100ppm. 3-comp sink can be used to wash rinse and sanitize until repaired. Corrective Action: Corrected at time of inspection.
