Discussed cooling methods and monitoring foods held initially outside the walk-in to ensure that they are moved into the refrigerator once the cooling process starts at 135*F.

Inspector's notes
Observed dishwasher handle dirty dishes and transition to clean dishes. Inspector requested dishwasher correct with a hand wash before going to clean dishes. A hand wash was not conducted. After discussing with management dishwasher was asked again and dishwasher left station and shift. Dirty dishes were returned to dishwasher area. Corrective Action: Corrected at time of inspection.

Observed Red Beef, Green Beef, and enchilada sauce improperly hot holding on cookline at 122*f degrees. Managment stated items had been placed online at 11am. Discarded. Corrective Action: Corrected at time of inspection. Hot holding is required to be maintained 135*f degrees.

Later in the inspection also observed a different gloved employee lean against the reach in cooler with their hands in between their body and cooler. Manager had both kitchen staff remove gloves, wash hands appropriately and reapply gloves. Hands must be properly washed after touching articles of clothing or the body.
