Predefined Comment: Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Also discussed using poly gloves as a protective layer to prevent cross contamination.

Observed enchilada sauce and pinto beans cooling at room temperature with an internal temperature of 88-95*F. According to PIC, food had been cooling for 1 hour prior to inspection and was instructed to use approved cooling methods and did so at time of inspection (ice bath). Provided cooling handouts at time of inspection.
