Observed reach in refrigerator malfunctioning at time of inspection. With inspector's min/max thermometer observed minimum temperature of 48.5°F. In the reach in refrigerator observed raw salmon fillets/47-48°F, raw sword fish/48°F, raw tuna/47-48°F, seafood salad/50°F, and raw chicken skewers/47°F.

PRIORITY VIOLATION-3-501.16(A)(2) and (B) - Priority: Time/Temperature Control for Safety Food, Cold Holding. Predefined Comment: Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. After discussion with the person in charge it could not be determined how long all TCS foods were held above 41°F. Predefined Comment: All TCS foods improperly cold held were discarded by PIC at time of inspection. Work order submitted by the PIC. Instructed PIC to discontinue storage of TCS foods in the reach in refrigerator until it maintains 41°F or less. Walk in refrigerators and display refrigerators all observed functioning properly at 41°F or less. Corrective Action: Corrected at time of inspection.

Observed meat grinder stored as clean in walk in cooler. Observed a small piece of meat residue on the auger inside the meat grinder. Food contact surfaces must be clean to the sight and touch. The meat grinder was broken down and sent off for cleaning at time of inspection. Corrective Action: Corrected at time of inspection.
