In the walk in cooler, observed white American cheese at 46*F, American cheese at 46*F, sliced provolone at 46*F, tzatziki sauce at 46*F, sliced swiss cheese at 46*F, and shredded cheese blend at 47*F. All foods had been placed in the cooler from a shipment yesterday or longer. All foods were embargoed. Fridge was set to approximately 45-46*F. Manager lowered set temperature and prior to the end of inspection observed fridge holding at 36*F.
