Observed chicken soup, meatball rice soup, and tomato soup in metal pans sitting off center inside metal pan with hot water. Soup holding an internal temperature ranging 120-137*F. Areas where pans were not settled into pan with hot water were at a temperature of 135*F. Person in charge reheated soups to 165*F and stated a hot holding unit will be on order soon. Observed several items in 2-door reach in refrigerator (cut spinach, diced tomatoes, sliced tomatoes, ham salad, sliced turkey, pasta, sliced cheeses, salsas, etc) with an internal temperature of 44-56*F. Person in charge stated they were prepared within 2 hours of inspection. Observed several items in ice bath at patient cold line (cut melons, cooked chicken, tomatoes, etc) with an internal temperature ranging 41-58*F. Items were not completely submerged in ice bath causing high temperatures of foods above ice line. Person in charge readjusted pans in ice. Recommended installing cold holding unit.
