Observed a mop sink with an Air Vacuum Break (AVB) with excessive calcium build up and a slow leak when water is run through system. Educated PIC that an AVB is required to be maintained in good repair to prevent backflow. Must repair all plumbing to a state of good repair prior to next routine inspection. Correct prior to next routine inspection.

Observed TCS food being held in a reach-in refrigeration unit with an internal temperature of 52*F. Internal termperature registered with an internal probe thermometer. Ambient temperature of unit registered 52*F with a min/max thermometer. Per PIC all TCS food have been in unit for greater than 24hrs at time of inspection. TCS food items included: dairy drinks, whole shelled eggs, meat and cheese snacks. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Second consecutive violation. Corrected at time of inspection.

Ambient temperature of unit registered 50*F with min/max thermometer. TCS food items included dairy products, protein shakes, whole shelled eggs, raw bacon, and meat/cheese lunch containers. Per PIC all food items were in unit for greater than 4hrs. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Instructed PIC to not place any TCS food items inside reach-in until repaired to maintain 41*F or less. Corrected at time of inspection.
