Observed black organic matter on the ceiling, ice shoot, and the back of the apron within the ice machine. Per person in charge (PIC) the ice machine was cleaned one month prior to inspection by a different company. Discussed with PIC to clean frequent enough to prevent the accumulation of organic matter. PIC reached out to cleaning company at the time of inspection. Corrective Action: Correct prior to next routine inspection.
