Observed several TCS food items including cheeseburgers, chicken salad sandwiches and egg salad sandwiches, and meat and cheese trays with an internal temperature between 47-50°F. All items were being stored in an open air reach in refrigeration unit with an ambient air temperature measuring 44°F. The TCS food items were voluntarily discarded by PIC and an emergency work order was put in for the repair of the unit. Ensure all TCS foods maintain a temperature of 41°F or less. Open air refrigeration unit was maintaining an ambient temperature of 44°F with several TCS foods present within the unit. The food was discarded and PIC placed a maintenance order in for the unit. In the interim until repair, no TCS foods shall be stored within the unit. Correct By: Correct Prior To Reinspection
