Observed Tomato Sauce Cans and Pre-sliced Canned Tomatoes with dents on the top and side seams. Informed PIC that swollen, rusted and cans dented on any of the 3 can seams (top, bottom, side) or deep, sharp dents should be considered unsafe. PIC separated the damaged cans. A designated area will be used to store damaged cans until removal from the establishment. Corrective Action: Corrected at time of inspection.

Observed at mop sink by back door a not-in-use chemical dispenser that is directly connected to a faucet with an AVB. Please have a separate water line installed upstream from the AVB for the chemical dispenser in order to allow the AVB to operate without being under constant pressure. The faucet with the AVB should be able to be used independently of the chemical dispenser. This will prevent chemicals from being back syphoned into the clean water supply. PIC disconnected at the time of inspection. Corrective Action: Corrected at time of inspection.

Unit was working properly on bottom two shelf but was warmer the farther up it went. Liquid eggs on top shelf was probed at 52 F, pre cooked bacon and prosciutto temperature 45 F. Per PIC liquid eggs were placed at 8 am. Liquid eggs were discarded and bacon and prosciutto to cool properly. Correct By: Corrected At Time Of Inspection
