Inspector's notes

Observed upright glass reach in unit with 2 ambient temperature of 50*F-53*F with min/max inspector thermometers. Internal thermometers were not functionally correctly. Calibrated thermometers with Person In Charge (PIC). Inside tcs foods listed: cooked eggs at 49*F; raw eggs at 47*F; liquid pasteurized eggs at 49*F. Establishment has temperature check via bluetooth. Visual checks at 4:30am and 10:30am. Time of inspection is at 3:30pm. All foods placed into main walk in unit to cool to 41*F. Verified after 30 minutes. ========Except during preparation, cooking, cooling, or when time is used as a control all TCS food to be maintained at 41°F or less.
