In open refrigerated case/47F, observed grab and go food packages containing hard boiled eggs and brie cheese at 48F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Staff were unsure when the food display area of the unit went above 41F. All TCS foods improperly cold held were discarded by PIC at time of inspection. Staff will not refill the unit with TCS food until it can maintain TCS food temperatures at or below 41F. Corrective Action: Corrected at time of inspection.
