#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed pre packaged sandwiches being stored near the entrance of the walk in cooler having an internal temperatures of 46*F. Person in charge states the walk in cooler was kept opened for a prolonged period of time due to their delivery coming today. Unit had an appropriate ambient temperature at the time of inspection (below 41*F). Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Advised person in charge to store all perishable foods in the far end of the cooler and away from the entrance of the walk in cooler to prevent TCS foods from being out of temperature. Person in charge moved the sandwiches to an alternate cold holding unit to cool down. Corrective Action: Corrected at time of inspection.

In one of the coolers, observed 3 opened packages of hotdogs with no date marking. Employee states the hotdogs were opened the day before and should have had a date marking. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). All RTE/TCS foods were properly date marked at the time of inspection. Corrective Action: Corrected at time of inspection.
