Observed metal ladles with brown discoloration on the outside and inside of the scoop. Material looks scratched and worn, with brown residue coming off when scraped. Discussed with PIC keeping all equipment in good repair and replacing damaged equipment or replacing once it cannot be properly cleaned. PIC discarded the ladles at time of inspection. All equipment must be maintained in good repair at all times. Corrective Action: Corrected at time of inspection.

Inspector's notes
In a prep cooler, observed cooked chicken, pickled onions, cooked corn, and boiled eggs having internal temperatures of 46-55*F. Unit was accidentally turned off but person in charge states they took temperature checks 2 hours prior to inspection and everything was in the appropriate temperatures. Unit was turned on at the time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.

TCS foods such as cows milk and cream cheese were being stored in the unit at the time of inspection. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Reinspection will be conducted on or before 1/16/2025. Corrective Action: Correct prior to re-inspection.

Person in charge stated all food in unit had been placed there at opening an hour prior to the start of the inspection and was temping below 41*F when placed in unit. Person in charge moved all food from unit to walk in and was brought down to 41*F prior to end of inspection. Discussed that all TCS food must be kept at or below 41*F to avoid food borne illness.
