Corrective Action: Corrected at time of inspection. Employee wearing gloves wiped them on a cloth towel and continued handling food. Employee doing general tasks put on gloves to handle food without washing hands. Had employees wash hands, put on clean gloves. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks.

Corrective Action: Corrected at time of inspection. Utensils submerged in quaternary sanitizer for less than 5 seconds after washing. Manager had utensils returned to the sanitizer for a full minute, per label directions. Food-contact surfaces sanitized using quaternary ammonia must be sanitized with a contact time according to manufacturers specifications.
