Corrective Action: Corrected at time of inspection. Packages of coffee for retail sale stored under a basket containing spray containers of stainless steel cleaner, Raid insecticide, Goo Gone and CLR. Chemicals must be stored away from food, utensils, and single service items at all times to prevent contamination. All chemicals were relocated and properly stored by PIC at time of inspection. 7-202.11 - Priority Foundation: Restriction-Presence and Use Addl Notes: Corrective Action: Corrected at time of inspection. Spray can of Raid Flying Insect Killer stored in the office. All pest control for the establishment must be performed by a certified pest control specialist and chemicals for pest control must not be stored onsite. PIC removed pest control chemicals from premises at time of inspection.

Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Employee properly washed hands at handwash sink at time of inspection.

Corrective Action: Corrected at time of inspection. No discard time for cut tomatoes, ricotta mix and arugula (at 42*F to 52*F internally) in middle cold table that is currently functioning properly. All TCS foods being held under time as a control were properly time stamped at time of inspection. Time as a Public Health Control requires written procedures detailing process for Time as a Public Health Control and time-stamping for items actively held under Time as a Public Health Control.

PRIORITY VIOLATION-5-202.11 (A), P: Approved System.............Shut-off nozzle connected to hose on mop sink faucet downstream of an atmospheric vacuum breaker, with the faucet leaking at the base and the AVB. Manager removed the nozzle and disconnected the hose to restore the air gap. Please repair the leaking faucet. Reviewed required back-flow prevention with the manager. PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding.........Cut tomatoes, yogurt, cooked beans, cheeses corn in the southern cold table at 44*F to 51*F. The manager determined the cold table setting had been knocked and turned the unit back down. After turning down the unit, the min/max read 39*F. The manager verified the food had been at proper temperature in the unit at the most recent line check. Portioned cooked chicken and cooked sausage stacked high in pans above the chill level in the top of the cook line cold tables at 45*F to 62*F internally. The manager stated all items had been put out recently and moved them to the walk-in to re-cool. Discussed maintaining all TCS food at or below the chill level to ensure it remains in proper temperature, 41*F or below.
