Inspector's notes

The establishment received chicken sandwich wraps at 52F and tuna salad sandwiches at 47-49F to serve for lunch service. The person that delivered the food items stated that the tuna had been made less than 1 hour prior and the temperature for the chicken salad wraps was documented to be at 32F when leaving the central kitchen facility less than 15 minutes prior. The items were placed into the freezer to rapidly cool. Ensure that refrigerated TCS food items are received in proper condition and at 41F or below . Corrective Action: Correct prior to next routine inspection.
