Inspector's notes

Observed raw beef items and raw chicken items, measured 46-48'F in low boy cooler drawers below stovetop. PIC stated all items were stocked less than an hour prior. Ambient temperature of unit recorded at 47.8'F. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. 2ND CONSECUTIVE VIOLATION. Corrective Action: Corrected at time of inspection.

For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4617/AMC-Toolbox---Cooling.---In the main kitchen, observed cooked stuffed peppers, pico de gallo (cut tomatoes), cut lettuce, and cooked prickly pear being cooled in a prep cooler. All of these food items were made less than an hour ago but employee added ice to some of these food items to aid in cooling while the other were placed in the walk in cooler to cool down. All of these food items were in the appropriate temperature/time for proper cooling. Discussed the importance of not using prep coolers to cool down food due to these units mostly being able to maintain cold temperatures rather than cooling.
