RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Person in charge (PIC) discarded all items exceeding 7 days. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed various pastries put on time as a control, but unmarked to indicate time they entered the temperature danger zone or discard time. Pastries contain ham, gruyere, cooked potatoes, dairy fillings. Informed person in charge (PIC) that protocol must be followed and each batch of pastries should be marked to indicate the time it was put out in room temperature. Pastries must be served within 4 hours and discarded at the end of 4 hours (no re-cooling). PIC stated understanding. PIC determined the pastries for today were put out at 7:30am and marked the pastries appropriately. Corrective Action: Corrected at time of inspection.
