Observed two butane torches being stored directly above some products such as jello packets and cake mix boxes inside the dry storage area. PIC moved the butane torches to the office away from food products at time of inspection. Corrective Action: Corrected at time of inspection.

PRIORITY VIOLATION-7-201.11 - Priority: Separation-Storage Predefined Comment: Chemicals must be stored away from food, utensils, and single service items at all times to prevent contamination. All chemicals were relocated and properly stored by PIC at time of inspection.
Inspector's notes
Observed inside the walk in a covered metal container with cooked chicken inside. The internal temperature of the cooked chicken was 55*F. Per PIC, the chicken was just cooked and put inside the walking less than an hour ago by an employee. PIC left chicken container uncovered for a rapid cooling at time of inspection. Diced watermelon and cantaloupe were also found with an internal temperature of 57*F-58*F inside another cooling unit, near the front area by a handwashing station. Per PIC, it was just portioned and put there less than 20 minutes ago, and it would only be served during lunch time. PIC removed the lids of all fruit containers at time of inspection. Corrective Action: Corrected at time of inspection.

2ND CONSECUTIVE VIOLATION Observed 20+ fruit flies and house flies in the server's area and dish pit. According to PIC, pest control applications have increased and there is a noticeable reduction in the number of flies. Observed that a deep cleaning was done under the beverage table in the server's area, the dish pit, and the floor sinks throughout the kitchen. Establishment must be maintained free of pests and all pest control measures must be conducted by a licensed pest control specialist. Must eliminate current pest control problem and obtain pest control from a certified and licensed pest control specialist by re-inspection. Re-inspection 5/27/2025. Corrective Action: Correct prior to re-inspection.
