Repeat Violation 2-102.12(A) - Core: Certified Food Protection Manager. For a permanent fix to this violation, check out these resources on our website. https://www.maricopa.gov/5114/Food-Restaurants
Inspector's notes
Observed cooked shredded chicken and cooked lamb in broth in the walk-in cooler with internal temperatures of 48-50F, probe thermometer, verified by PIC. The chicken and lamb were in deep, covered containers on the bottom shelves of the walk-in and were cooked and started cooling the day prior to inspection (more than 6 hours). PIC discarded the cooked chicken and lamb, see embargo form. PIC will retrain employees on proper cooling methods such as using shallow metal pans that are loosely covered and placed into the walk-in cooler/freezer on a speed rack or top shelf to facilitate airflow. Using ice as an ingredient and frequent stirring also help to facilitate rapid cooling. Excessive time for cooling of time/temperature control for safety foods has been consistently identified as one of the leading contributing factors to foodborne illness. The Food Code provision for cooling provides for cooling from 135F to 41F in 6 hours: 135F-70F in the first 2 hours; 70F-41F in the next 4 hours. Corrective Action: Corrected at time of inspection.

2-102.12(A) - Core: Certified Food Protection Manager. For a permanent fix to this violation, check out these resources on our website. https://www.maricopa.gov/5114/Food-Restaurants
Inspector's notes
Observed metal pans of cut cantaloupes, watermelon, and honeydew melon stored on the cook-line in a well of the steam table, with an internal temperature of 69-70F, probe thermometer, verified by PIC. The well observed to be turned off and no ice was used to store the cut melons during breakfast service. According to PIC, the melon will be served or discarded within 1 hour of the inspection and was placed into the well an hour prior to the inspection. Discussed using an ice bath and monitoring the temperature of all TCS foods held on the line during meals to ensure that 41F or less is maintained. Temperature is an important factor in limiting pathogen growth. Bacterial growth and/or toxin production can occur if time/temperature control for safety food remains in the temperature "Danger Zone" of 41F to 135F too long. Corrective Action: Corrected at time of inspection.
