Ensure that cooled foods can cool to below 70F within 2 hours, and below 41F after 6 hours total. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed the following TCS food items holding 48F in the prep table on the assembly line: cheese, sour cream, chopped lettuce, pico, tamales, chopped cabbage, chopped ham, cooked potatoes, chicken, beef, and rolled beef tacos. PIC stated that the table had been open when serving breakfast. PIC moved the items to the walk-in refrigerator and placed an ice bath on the remaining food items. Also observed a bottle of red salsa and a bottle of green salsa at 61F in the beverage cooler. Another bottle was holding 46F. PIC discarded the salsa holding 61F. PIC stated that customers leave the bottles on their table when dining in. Discussed using 6-hour time as a public health control. Inspector had previously created and emailed a 6-hour time policy to the Operator. The document was emailed to the Operator again. TCS food must be stored at 41F or below when cold holding. Corrective Action: Corrected at time of inspection.
