Observed a handwashing sink directly behind the rotisserie chicken display case that is missing some caulking such that there is a small gap between the sink and the wall. Discussed with person in charge to add caulking to the sink so that it is smooth and flush to the wall. The person in charge will have the sink sealed. All equipment must be maintained in good repair at all times. Repair all equipment to a state of good repair prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.

#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed a container of loaded potato salad inside of a deli refrigerator with an internal temperature as measured using a probe thermometer of 51°F. In discussion with the person in charge, the potato salad had been out at a sampling station during the morning. It was determined that the food had been out of temperature for almost 4 hours when the internal temperature was assessed and the food was embargoed at time of inspection (see embargo form). Observed the sampling station where the potato salad was being sampled out to customers. It was observed that the ice bath that the potato salad was sitting in did not have enough ice nor did it have water. Person in charge added cold water and more ice to the ice bath container and fully submerged the container in the ice water bath so that the ice water fully surrounds the container. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
