Inspector's notes

Liquid egg, sliced ham, diced chicken, and grilled chicken filets found in reach-in cooler nearest grill with internal temperatures of 46-47*F. Ambient temperature in the cooler was 49-50*F. PIC stated all food items in the cooler were placed there around 7:00 AM today. The cooler's ambient temperature had not been checked today prior to inspection. PIC discarded the TCS food items in the cooler. The cooler will not be used for cold holding of TCS food items until it has been repaired/replaced and able to maintain an ambient temperature of 41*F or below. Alternate coolers are available to continue normal operations. Cold held TCS food items must be maintained at 41*F or below. Corrective Action: Corrected at time of inspection.

Cut lettuce with preparation time of 10:00 AM found in walk-in with internal temperature of 46-47*F. The lettuce was in 3 containers that were stacked and covered. PIC moved the lettuce to the freezer and had it rapidly cooler to 41*F before 2:00 PM. Please ensure best cooling methods are employed when cooling TCS food items. Corrective Action: Corrected at time of inspection.
