Observed 2 open containers of cooked hot dogs, and 1 container of cooked taquitos in reach-in cooler with no date marks. Per employee, items were opened from packaging 3 days prior. Instructed employee to date products, and reviewed proper date marking. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Corrective Action: Corrected at time of inspection.
