Inspector's notes
Chicken patties sandwiches were held at 110 degrees F in a hot holding oven. The items were piled up on one tray. The manager was advised to re-heat the sandwiches and spread them on trays to avoid losing temperature. The items were reheated to 165 degrees F and placed in the holding unit.
