Inspector's notes
Observed employee handling cooked chicken with gloves then remove gloves and take cooked chicken to walk in cooler. The employee then returned to the prep station and put on a new pair of gloves without washing hands. Discussed the importance of proper hand washing procedures and frequency with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Corrective Action: Corrected at time of inspection.

Inspector's notes
Observed cut arugula spring mix in prep table. Internal temperature was taken at 9:15am (52*F). Person in Charge stated spring mix was moved from the walk in to the prep table at 8:30am. The arugula spring mix tub was stacked on another tub in the prep table. The arugula mix was moved to a new tub so it was no longer stacked. Internal temp was taken of the arugula at 10:30am (48*F). Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.
