Observed diced tomatoes on serving line with an internal temperature of 49*F. According to PIC, TCS foods use time as a control for food safety but could not provide documentation to show temperature of tomatoes started at 41*F and below or when it will be discarded. Discussed importance of logging TCS foods when removed from temperature controlled environment to ensure initial temperature is 41*F and below for cold foods.
