Observed bagged lettuce with an internal temperature of 52*F stored on counter. Employee stated lettuce had been left out for 15 minutes prior to inspection and moved to walk-in cooler to rapidly chill. Discussed ensuring proper cold holding temperatures are maintained below 41*F when not in use to prevent bacterial growth.
