Observed pink slimy buildup on the inside of the ice machine. Also observed some organic matter buildup on some soda fountain nozzles. Discussed with person in charge to clean the ice machine and soda fountain nozzles on a more frequent basis to prevent the accumulation of organic matter in the ice machine and on soda nozzles. The person in charge will have the ice machine cleaned. All food-contact surfaces must be cleaned to sight and touch. Corrective Action: Correct prior to next routine inspection.

Inspector's notes

Observed bags of creamer in boxes that were labeled "perishable; keep refrigerated" with internal temperatures as measured using a probe thermometer of 58°F - 62°F in a small reach-in glass door refrigerator in the back prep area. According to the person in charge, the bags of creamer had been in the refrigerator for more than 4 hours and were embargoed at time of inspection (see embargo form). The person in charge will store creamer bags in the walk-in cooler until that refrigerator is repaired or replaced. The establishment has sufficient cold holding capacity to maintain safe operation. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
