Observed large pot of beef broth in the walk in refrigerator with an internal temperature of 59 degrees Fahrenheit. Per person in charge the broth was made around 12:00am, 9 hours prior to inspection. Broth did not cool to the required 41 degrees within 6 hours. Reviewed cooling process with person in charge. Broth voluntarily discarded. Correct at time of inspection.

Observed consome in large deep pots cooling inside walk-in cooler. Per PIC, consome was cooked two hours prior to inspection and in the middle of the cooling process. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. consome being cooled in deep pots were transferred to shallow containers to allow for rapid cooling. Corrective Action: Corrected at time of inspection.
