Discussed with person in charge (PIC) that time/ temperature control for safety (TCS) foods must be cold held at 41*F and below. PRIORITY VIOLATION-2-301.12, P: Cleaning Procedure. ====Observed employee wash hands for 5 seconds by placing soap on hands then placed hand immediately under running water, scrub for 5 seconds then remove hands from water and towel dry hands. Notified PIC(Person in charge) PIC had employee properly wash hands and educated employees on proper handwashing procedure. Hands should be rinsed under warm water, apply soap, vigorously rub for 10-15 seconds, rinse under warm water for 20 seconds and then dried.
