Inspector's notes
Observed food catering fridge with ambient temperature of 49*F with min/max thermometer. Inside the unit following tcs foods: three large sealed lettuce bags 44*F-50*F; cut tomato containers medium size at 50*F. Temperature log check at 6am has unit at 38*F. Time of inspection is at 12pm. Notified Person In Charge (PIC). PIC confirmed internal temperatures. Directed employees to move all tcs items to main walk in to cool to below 41*F. Verified after 1hr. ==========Except during preparation, cooking, cooling, or when time is used as a control all TCS food to be maintained at 41°F or less. Corrective Action: Corrected at time of inspection.
