Observed dishes in <100ppm quat sanitizer in the 3 comp sink. Observed two unopened QT-10 chemical test strips in the establishment. Food-contact surfaces must be properly sanitized after washing and rinsing. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. PIC added additional quat sanitizer. Food-contact surfaces were properly sanitized at time of inspection. Corrective Action: Corrected at time of inspection.

Discussed cleaning soda nozzles at a cleaning frequency that prevents buildup. Discussed that manual scrubbing is necessary to remove buildup. Core-4-502.13 (B), C: Single-Service and Single-Use Articles-Use Limitations; Milk Dispensing Tubes ------ Observed dispensing tubes for iced coffee containing at the self-service iced coffee dispenser with the tubing cut off at a blunt angle. Discussed that dispensing tube shall be cut on the diagonal (45*) leaving no more than one inch protruding from the chilled dispensing head. PIC trimmed the tubs to the appropriate angle at the time of inspection. Discussed ensuring iced coffee BIBs are appropriately assembled and cut prior to resuming self-service in the machine.
