Establishment has two pizza prep coolers. In the one against the wall, observed TCS foods between 48-50*F. TCS foods included beef, sausage, cheeses, tomato sauce, and cut tomatoes. In the pizza prep cooler towards the middle of the room, observed TCS foods between 49-51*F. TCS foods included sausage, tomato sauce, tomatoes, and cheeses. All foods had been in the units approximately 2.5 hours. All foods in both coolers were moved to the walk in cooler to rapidly cool.
